For one serving
- 1 coffee cup of coffee
- Sugar (may be varied)
- Sade (no sugar at all)
- Orta şekerli (moderate amount) 1 teaspoon
- Şekerli ( with more sugar)
- Az şekerli (less sugar)
Put water in a cezve (a small, long-handled pot) or a small saucepan, add sugar and coffee and stir well. Bring to the boil over low heat. Watch the pot carefully. Remove the pot and pour off the froth in the cup when it begins to foam up and rise.
Then bring the rest to a boil. Remove from fire and fill the cup. Best when made in small quantities, no more than 4 cups at a time.
